Pćo de Queijo
(Brazilian Cheese Muffins)
Cooking Time: 1 hour
Makes 12 muffins
Ingredients:
3 cups (11 oz.) Parmesan cheese
3 cups tapioca flour
1 cup vegetable oil
3 eggs
1 cup milk
1 tsp. salt
Directions:
Preheat the oven to 350 degrees. Butter a muffin pan. Blend all
ingredients in a blender until theyre homogenized. Fill each muffin pan
cup halfway full and bake for 20 minutes, or until the muffins are golden.
Best served hot. |
